One thing I love about cake decorating is that it’s not always about what’s on the outside, but sometimes, it’s what’s on the inside that brings the most joy and surprise. So, imagine my “surprise” when I discovered an awesome book that shows me how I can make surprise-inside cakes.
And the heaven’s opened up and the angels cried out “Hallelujah!”
Surprise-Inside Cakes by Amanda Rettke
Surprise-Inside Cakes is a great cake recipe book and tutorial wrapped into one. Written by Amanda Rettke, also known as I AM BAKER from iambaker.net, Amanda gives you step-by-step instructions on how to create some of her best surprise-inside cakes. Each recipe, and there 5 cake recipes and 4 frosting recipes, allows you to make dozens of great designs ranging from easy, like the Stripe Birthday cake… …to more challenging, like the ring cake. Based on four techniques, Surprise-Inside Cakes gives you confidence and inspiration in creating Amanda’s cakes or diving into your imagination to create your own designs. Here are the four techniques:
- Deconstruction – Taking the cake apart and using cake and frosting to make designs
- Baked cake inside of batter – Adding already baked cake to batter and baking again
- Batter manipulation – Mixing different colored batter inside the pan before baking
- Hidden Surprises – Hiding treats, like candy, in a hollowed out middle
My Own Attempts
I tried, a few years back, to make my own surprise-inside cakes and they turned out better than I thought they would for a first-timer. This was before I even knew this book existed. Now that I see there is more you can do with cake, the sky’s the limits. I cannot wait to dive deep into this book and start creating.
